What You Need To Finish Brisket In The Oven

- A full packer
- A trimming knife
- Spice rub
- A smoker
- Smoking wood
- Aluminum foil
- A quick read probe or food thermometer
- An oven or Dutch oven
- A cooler
- And a lot of time
How To Smoke And Then Finish Brisket In The Oven
The method you use to finish your brisket in the oven will depend on your personal preference and what works best for you. But we will take you through the whole process of one method that is easy to do.
First, we will take you through smoking the brisket to finishing it in the oven, so you can be sure your brisket is perfect!
You need to buy a whole, untrimmed packer for this method, one that is approximately 10 pounds. You should look for one that has good marbling, as this will help with the tenderness of the meat.
Trim your brisket, leaving about 1/8 of the fat on it, and pat the beef dry with a paper towel.
Apply your spice rub generously to the brisket and place it in the cooler while you set up your smoker. Next, spray your smoker racks with a non-stick spray. Preheat your smoker to about 225°F and add your wood pellets to the hopper.
Make sure the flame broiler is closed as you’ll be cooking it on indirect heat.
Place your brisket into the smoker with the fat side up. Monitor the temperature, ensuring it stays between 225° and 250°F. Allow your brisket to smoke for 4 hours and then carefully turn it over.
You can now spray your brisket with an apple spray or other liquid as needed from this point onwards. Then, after about three or four more hours, you can remove the brisket from the smoker and wrap it in two layers of aluminum soil tightly.
From this point, you can leave the brisket to cool. Then place it in the fridge to be finished in the oven the next day if needed, or you can go straight to the stove; either way will work.
Preheat your kitchen range to 300°F and wrap the brisket foil. Insert the probe or thermometer into the thickest part of your brisket and place the brisket in the oven.
Cook the brisket until its internal temperature is around 205°F.
This can take about 2 hours, but once it’s reached this temperature, you can remove the brisket from the oven and leave it to rest for 30 minutes while it’s still wrapped.
